Savour the Flavour: Wholesome Sang Choy Bow

This Chicken Sang Choy Bow recipe is a lower calorie version of the popular dish and is a super healthy, family friendly meal. This recipe is very quick and easy to make mid-week and if you double up on the mince, you’ll have leftovers for lunches. Turkey mince is also another great low-calorie substitute.



Recipe:


Serves: 4 Preparation time: 10 minutes Cooking time: 10 minutes Ingredients: - 2 large iceberg lettuce - Olive oil spray - 500g of lean chicken mince - 3 spring onion, finely sliced - 1 medium carrot, diced or grated - 2 celery stalks, diced - 1 red capsicum, diced - 3 tbsp Ayam Hoisin Sauce - 3 tbsp Low Sodium Soy Sauce - 3 Garlic Cloves, Crushed - 2 tsp finely grated ginger - 4 handfuls bean sprouts

- Sliced chilli to serve (optional)


Method: 1. Select the best lettuce leaves and trim them with scissors if necessary to make 12 large cups. Place in a large bowl with iced water to crisp.


2. Lightly spray a wok with oil and heat on high. Stir-fry chicken mince in 2 batches until brown. Return all of the chicken to wok and add the spring onion and stir-fry for a further 2 minutes.


3. Add all remaining ingredients except for the bean sprouts. Stir-fry for another 4-5 minutes. Add bean sprouts and stir through for 30 seconds.


4. Remove lettuce cups from water and lightly pat dry. Spoon mixture into lettuce cups and serve with fresh chilli (optional).
